Easy Caprese Pops

This is what I cook… for a yummy side or snack. So simple but my favorite version of a salad on a stick. Just skewer or toothpick your Roma or cherry tomatoes, piece of basil & mini mozzarella balls. Drizzle with balsamic vinegar glaze. I make my own or you can buy it in the store. You can also drizzle with some olive oil and sprinkle with fresh ground pepper if you like. Yum! 

Rhubarb Cake

This is what I cook…in the summer!  Summer in Minnesota always called for rhubarb sauce, rhubarb bars and my hubby’s fave, rhubarb custard pie! Rhubarb grows ok at 9000’ but it just doesn’t get deep red. But I just found it in the grocery store! This recipe did well at altitude with no adjustments!  You can really make this with any topping. I have made it with strawberries, blueberries, brown sugar/cinnamon… Rhubarb Cake Ingredients ⅔   cup   granulated sugar   , plus 2 tablespoon for top of rhubarb 3   eggs 3   tablespoons   butter   , melted 2   tablespoons   milk   or buttermilk 1   teaspoon   vanilla or vanilla bean paste 1   cup   plus 2 tablespoon all-purpose flour ¾   teaspoon   baking powder pinch of salt 2   cups   diced rhubarb Instructions Preheat oven to 350 degrees F. I love to cook. There, I said it. I live in the Rocky Mountains of Colorado and love to experiment with lots of ingredients and high altitude cooking & baking! I am also a General Manager of an on mountain restaurant at a ski area that is at 11,500 feet above sea level and live at 9115 feet above sea level. I love experimenting. I also love bringing my traditional Minnesota recipes to my friends in Colorado. I also love just making easy meals for my hubby and I. Sometimes they are simple and sometimes more “puttsey” as my Gram used to say. So this is what I cook….I hope you enjoy!
