I love to cook. There, I said it. I live in the Rocky Mountains of Colorado and love to experiment with lots of ingredients and high altitude cooking & baking! I am also a General Manager of an on mountain restaurant at a ski area that is at 11,500 feet above sea level and live at 9115 feet above sea level. I love experimenting. I also love bringing my traditional Minnesota recipes to my friends in Colorado. I also love just making easy meals for my hubby and I. Sometimes they are simple and sometimes more “puttsey” as my Gram used to say. So this is what I cook….I hope you enjoy!

Doggie Pupcakes!

 This is what I cook…. for my dog’s bday! This is Humphrey’s favorite. He’s the best boy! He just turned 11! 🐾 INGREDIENTS 1 cup whole wheat flour  ½ teaspoon baking soda  1 large egg  2 tablespoons canola oil  ¼ cup peanut butter  1 medium ripe banana, mashed  ½ cup almond milk  If you want them frosted:  Use Peanut butter or whipped cream  INSTRUCTIONS Preheat the oven to 350. Line a muffin tin with 6 cupcake liners and spray with cooking spray. Combine the flour and baking soda in a medium bowl and stir well. Add the egg, oil, peanut butter, mashed banana and milk and stir until just combined. Divide the batter between the six muffins - they will be full. Bake at 350 for 15-18 minutes, until set. Let cool completely then smear with peanut butter and serve to your dog!

Swedish Pancakes

This is what I cook… for breakfast, lunch, dinner or anytime.  This is a Minnesota recipe from my sister-in-law. Swedish pancakes (or crepes) are thinner and more “eggy” than regular pancakes. They can be savory or sweet with toppings of your choice. My favorite are to make them with ham & cheese or with strawberry sauce & whipped cream.  Recipe: 3 eggs 1 1/4 cup milk 1 1/2 cups of flour 3 tbsp sugar 1/4 tsp salt Mix all ingredients together. Pour large circles onto hot griddle. Cook on both sides until golden brown. Fill or top with toppings of your choice. (Picture above: I filled with ham & Swiss cheese and topped with a Dijon béchamel sauce.)

Minnesota Tator Tot Hotdish

This is what I cook…. A lot! It’s a Minnesota hometown famous favorite! Ingredients:  2# ground beef 1 tsp garlic powder 1 tsp onion powder Salt & pepper 3/4 cup chopped onion 3/4 cup chopped celery 1 can cream of mushroom soup 1 can cream of chicken soup 1/2 cup milk 1-2 cups of any vegetable (I like French cut  beans but you can use corn, mixed veg, peas, whatever you have or like)  1 bag of tator tots Brown ground beef with seasonings & onion until cooked and onions are translucent. Add celery, soups and vegetable. Pour into casserole dish and top with tator tots. Bake at 350 for 35-45 minutes. Enjoy!
