Buffalo Chicken Pinwheels

This is what I cook… or cooked for the first Vikings game! Skol!  These are so yummy! Simply mix 1 pkg of cream cheese, 8 oz blue cheese crumbles and 1/2 cup of sour cream together.  Add 1/4 cup of diced jalapeƱos and 1 tsp of cayenne pepper.  Spread over 6 large tortillas.  Before rolling, spread on Franks Red Hot Sauce, shredded cheddar and shredded chicken tossed in Franks Red Hot Sauce.  Roll up and refrigerate wrapped in plastic wrap for at least one hour.  Slice and serve!  Yum!  

Avocado Toast

This is what I cook…A lot! I love, love, love Avocado toast! It’s so easy and yummy! Smash avocado and mix in some olive oil. Season with salt or garlic salt. Spread on toast and top with whatever you like! I like to top mine with everything bagel seasoning to keep it simple or a fried egg! 

Easy Pork Tenderloin Dinner

This is what I cook… for an easy dinner. Sometimes you need a quick, easy but delicious dinner. Enter, Pork Tenderloin! This was our dinner last week after I had a long day at work. This is a bake in the bag Pork Tenderloin topped with a drizzle of whole grain mustard, with roasted sweet potatoes and a quick salad (from a bag).  Delicious, easy and quick!

Chocolate M&M Cookies

This is what I cook… for my sweet tooth. I do like to bake. When I get bored with traditional chocolate chip cookies, I make these! So easy and so good.  I really don’t use any specific recipe but I do increase the flower by 2 tbsp to 1/4 cup at my altitude and chill the dough for a few hours before baking. Usually I google a chocolate chocolate chip cookie recipe and add m&m’s instead of chocolate chips. These are my husbands fave! 

Crock Pot Baked Potatoes

This is what I cook…for a Baked Potato bar!  Clean Russet potatoes and prick skins with fork. Rub skins with olive oil. Salt skins with kosher salt. Wrap in foil.  Cook until tender, on low for 7.5 hours or on high for 4.5-5 hours.  Serve with baked potato fixings: butter, sour cream, shredded cheese, scallions, bacon bits, broccoli, hot sauce, whatever you like!!! Yum! 

Taco Bites!

This is what I cook… for my fantasy football draft every year! Who is ready for some football!?!? My fantasy football league guys ask me to make these every year for our draft. My mom’s original recipe called them “Wonton Appetizers” but my FFL guys renamed them “Taco Bites!” Wonton cups: Press raw wonton wrappers into a muffin tin and bake at 350 for 8-10 minutes until lightly brown. Remove from pan and arrange on a cookie sheet.  Filling: Brown 2 lbs of hamburger, 1 pkg Jimmy Dean Hot (bulk) sausage and 1 cup chopped onion. Drain and let cool. Add 1/2 cup chopped red pepper, 1/2 cup chopped green pepper, 1 can chopped black olives, 1 - 16 oz. container of sour cream, 1 pkg taco seasoning, 1 pkg Ranch dressing seasoning, and 3 cups shredded cheddar cheese. Mix well.  Scoop filling into wonton cups. Top with one sliced jalapeƱo pepper. (You can leave this out of you don’t like spicy.) When ready to serve, bake at 350 for 15 minutes. Enjoy!
