Chicken & Mushrooms

This is what I cook… for dinner. 

It’s pretty simple and very delicious. 

1# chicken breast tenderloins or thighs cut to bite size pieces

1 package of mushrooms, sliced 

1/2 cup butter (divided) and 2 tbsp olive oil

Salt & pepper to taste. 1 tsp Italian seasoning, 1tsp garlic powder & parsley. 

Heat olive oil in pan with 2 tbsp butter. Sautée chicken until lightly browned on all sides. Remove from pan. Heat 2 tbsp of butter and add mushrooms. Cook until mushrooms are tender. Add the chicken back to the pan and season with seasonings. Add remaining butter and top with parsley. Serve over rice or mashed potatoes.
