Brown Butter Oatmeal Chocolate Chip Raisin Cookies

 This what I bake… often! I love oatmeal cookies. My Gram used to let us eat cookies for breakfast if they has “cereal” in them. The brown butter in these make these so good! 


Ingredients:
1/2 cup of butter browned and cooled
1/3 cup granulated sugar
1/3 brown sugar
1 egg
1 tsp vanilla
1 cup all purpose flour 
1 cup old fashioned oats 
1 tsp kosher salt
1 tsp cinnamon
1/2 tsp baking soda
1/3 cup raisins 
1/3 chocolate chips 
(Or any mix in’s you like. I have done pecans, m&m’s, white chocolate chips, you pick!!!)

To make brown butter, melt one stick (1/2 cup) of butter in pan swirling as it foams and boils  until browned. Pour into mixing bowl. 

Cool browned butter about 30 minutes in bowl then add sugars, mix well then add egg and vanilla. 

Add flour, oats, salt, cinnamon and baking soda. Mix well and fold in raisins and chocolate chips. Roll into balls and plane on parchment lined baking sheet. Chill for 20 minutes and then bake at 350 for 8-9 minutes.
