This is what I cook… when I want an easy “healthy” dinner. Gets some veggies in the mix!
Dice one pound raw chicken breasts. Slice veggies: red pepper, yellow pepper, green pepper, onion, green beans, broccoli and carrots. Sauté chicken in sesame oil until cooked through and add veggies. Sauté until veggies are tender. Serve over rice or with egg rolls. Top with sliced scallions and sesame seeds.
