Egg Foo Young
This is what I cook… for dinner. My husbands favorite!
Shrimp & Pork Egg Foo Young
1 pkg of diced ham
1 pkg of salad shrimp
1 tbsp cornstarch
1 tbsp water
1 can of bean sprouts
8 eggs
4 tbsp soy sauce
1/4 cup chopped green onions, green and white parts
Salt and pepper
1 tbsp sesame oil
Mix water and cornstarch until dissolved. Add remaining ingredients and heat skillet on medium heat. Add sesame oil to pan until warm. Scoop egg mixture with a 1/3 cup into pan and fry until cooked on both sides like a pancake. Serve over rice with brown gravy (below) and sautéed veggies. (For vegetarian egg foo young, omit shrimp and ham and substitute your favorite veggies.)
Gravy: Melt 2 tbsp butter in pan. Add 2 tbsp flour to create a rue. Add 1 1/2 cups beef or chicken broth and 2 tbsp soy sauce. Bring to boil and continuously stir until thickened.
Serve over white rice and/or veggies topped with the gravy.
