Baked Ham & Cheese Sliders

This is what I cook… for an easy lunch, party dish or snack. There are lots of recipes online of many variations of these and you’ll want to make more than 12 if you have a bigger crowd.  Use one 12 count package of Hawaiian sweet rolls or slider buns. Cut in half. Put bottoms in glass baking dish lined with foil or sprayed with cooking spray. Top with two layers of ham & Swiss cheese. Assemble tops of buns over layers of ham & cheese. Glaze: Melt one stick of butter. Add 1 tbsp Dijon mustard, 1 tbsp poppy seeds & 2 tsp dried minced onion. Mix and brush on tops of buns.  Bake at 350 for about 20 minutes covered in foil. Bake another 5-7 minutes uncovered. Slice immediately and serve. 

Chicken & Mushrooms

This is what I cook… for dinner.  It’s pretty simple and very delicious.  1# chicken breast tenderloins or thighs cut to bite size pieces 1 package of mushrooms, sliced  1/2 cup butter (divided) and 2 tbsp olive oil Salt & pepper to taste. 1 tsp Italian seasoning, 1tsp garlic powder & parsley.  Heat olive oil in pan with 2 tbsp butter. Sautée chicken until lightly browned on all sides. Remove from pan. Heat 2 tbsp of butter and add mushrooms. Cook until mushrooms are tender. Add the chicken back to the pan and season with seasonings. Add remaining butter and top with parsley. Serve over rice or mashed potatoes. 

Sugar Cookies

This is what I cook… when I don’t want chocolate!  This is my favorite super easy recipe.  1   cup   unsalted butter   , room temperature 2/3   cup   + 3 tablespoons granulated sugar   , divided 2   cups   + 1 tablespoon all-purpose flour,  spooned and leveled 1   teaspoon   vanilla   (optional, but recommended) rainbow sprinkles or nonpareils ( optional, but recommended) Scoop with cookie scoop to create one inch balls. Flatten balls slightly and and roll in 3 tablespoons of sugar or sprinkle with sprinkles. Bake at 325 for 14-16 minutes. Cool for another 10 minutes before taking off cookie sheet. 

Sausage & Pepper Pasta

This is what I cook… when I need a quick meal. Toss cooked bow tie or penne pasta with sliced chicken sausage and large chopped green peppers in olive oil in a hot sautéed pan. Serve topped with Parmesan cheese and naan bread. Yum!
